Here is the recipe:



Ingredients:
  • 170 grams smoked salmon, thinly sliced

  • 225 grams cooked rice noodles

  • 115 grams goat cheese, crumbled

  • 1 cup arugula leaves

  • Shaved Parmesan for garnish

  • Olive oil for cooking and garnish

  • Salt and freshly ground black pepper to taste

Instructions:
  1. Heat Olive Oil: Place a large skillet over medium-high heat and add a drizzle of olive oil. Let it heat up until shimmering.

  2. Sear Smoked Salmon:  Once the oil is hot, gently place the smoked salmon slices into the skillet.  Sear the salmon for a minute or two on each side until it's lightly browned and has a nice crust.

  3. Melt Goat Cheese and Add Noodles:  Sprinkle the crumbled goat cheese over the seared salmon in the skillet.  Allow the goat cheese to melt slightly, creating a creamy sauce as it combines with the heat from the salmon.  Add the cooked rice noodles to the skillet, tossing them with the salmon and creamy goat cheese.

  4. Season to Taste:  Season the dish with salt and freshly ground black pepper to your preference. Remember, the smoked salmon and Parmesan are already salty, so go easy on the salt.

  5. Remove from Heat:  Once everything is well combined and heated through, remove the skillet from the heat source.
